I Tried Pie Maison Before the Doors Open. Get in Line Behind Me.

Every so often in this town, you get to taste something before the line forms. This is me telling you the line is coming. It’s called Pie Maison, and it’s headed for downtown Bend.

You’ll find them at 920 NW Bond Street, in the space next to Hola! facing Minnesota Avenue, where BrownBag Popcorn used to be before it moved across the street. Right now it’s still a construction zone. Sawdust, permits, the whole thing. The storefront isn’t finished, the doors aren’t open, and if you walked past it today you wouldn’t look twice.

But I got to their pop-up before the buildout, and I’m just going to say it: it was one of the best pies I’ve ever had. Not “best pie in Bend.” Not “pretty good for a pop-up.” One of the best pies I’ve ever had, period, anywhere. I’ve been thinking about it since.

Here’s what I’ve been able to piece together about them. They call themselves a modern bakery with European soul, and the way they operate backs that up. Everything is baked in small batches. Pies come by the slice or whole, and whole pies work on a pre-order system - limited windows, reserve yours or miss out. They even run what they call “pie drops,” where you sign up to get word when the next batch lands. That’s not how a bakery cranking out volume operates. That’s how people who care about every single crust operate.

And that’s the part that gets me, honestly. Bend’s food scene has leveled up fast these last few years. I wrote a whole post about my five favorite restaurants here, and half of them didn’t exist five years ago. But most new spots arrive fully formed, backed and polished. Pie Maison is doing it the old way: pop-ups first, earn the following, build the storefront while people wait. There’s something about betting on downtown Bend with a pie shop, not a concept, not a chain, just really good pie, that I want to root for.

When they open, the plan is Wednesday through Saturday, afternoon into evening, which tells you something too. This isn’t a morning bakery fighting for the coffee crowd. This is dessert-after-dinner-downtown territory. Grab a slice after a show at the Tower, after dinner on Wall Street, after one of those summer evenings when nobody wants to go home yet.

So no, I can’t tell you to go today. The doors aren’t open. What I can tell you is to remember the name, Pie Maison, watch that corner on Minnesota Avenue, and when the paper comes off the windows, don’t wait. I’ll be the guy at the front of the line acting like he discovered the place.

Because, well. I kind of did.
